Key West sells more boat trips per square mile than almost anywhere in the United States, and the quality range is enormous. Choosing well is mostly about matching the format to what you actually want from the day.
The four things sold as a Key West charter
Sunset sail. Two to three hours on a schooner or catamaran, usually shared with 30 to 40 people. Cheap, pretty, and completely fine — just not private.
Shared reef and snorkel trip. Half day to the reef with gear included. Good value, fixed schedule, crowded stops.
Private day charter. Your own boat and captain for four to eight hours. This is where the trip becomes yours: you choose the sandbar, the reef stop, the lunch anchorage and the music.
Multi-day or overnight charter. Less common out of Key West than out of Miami, and usually built around the Marquesas or a Dry Tortugas run.

The fuel line is where quotes diverge most. A boat that looks cheaper per hour can be more expensive once a long run is fuelled.
Where the boat actually goes
The backcountry and the sandbars. Shallow, calm, and the best choice for families or anyone worried about seasickness.
The reef. Snorkelling over the only living coral barrier reef in the continental United States. Sea state matters here; a windy day makes the reef unpleasant and cloudy.
The Marquesas. About 25 miles west, uninhabited, and a full-day commitment on a fast boat.
Dry Tortugas. Roughly 70 miles west and a serious run. Most visitors go by the official ferry or seaplane rather than a private charter, and the park has its own fees and rules published by the National Park Service.
Much of the water around Key West sits inside the Florida Keys National Marine Sanctuary, which has anchoring, no-motor and protected-area rules your captain must follow. Those rules are published by NOAA. A captain who cannot explain them is the wrong captain.
How to book it well
Go early. Morning charters have calmer water, better light and fewer boats at each stop. Afternoon wind in the Keys is a real pattern, not bad luck.
Check the wind forecast, not the rain forecast. Rain passes in ten minutes here. Wind ruins a reef day.
Ask the captain how long they have run these waters. Local knowledge is the difference between three good stops and one crowded one.
Confirm the marina. Key West Bight and the Old Town marinas are walkable from most hotels; Stock Island is a drive.
Winter is windy. December through March brings cold fronts that cancel reef trips. Build a spare day into the plan.
